A sunny, essential vegetable, fresh yellow peppers are sold by the kilo (order by weight). Yellow peppers are characterised by their bright colour and sweet, slightly fruity flavour, which is less bitter than green peppers. They have crisp, juicy flesh. They are delivered loose in 5 kg cardboard boxes for large volumes.

► Yellow peppers are widely used in professional cooking for their sweet taste, texture and, above all, their colour, which adds an aesthetic contrast to dishes:
► Salads and cold starters: Ideal raw, cut into strips, for mixed salads, raw vegetable platters or appetiser skewers.
► Hot dishes and garnishes: Perfect for cooking (grilled, pan-fried, roasted). Essential in ratatouille, vegetable stir-fries, stuffing (stuffed peppers), fajitas and Mediterranean dishes.
► Sauces and Coulis: Can be roasted and peeled to make coulis or creamy, colourful sauces to accompany fish or poultry.
► Decoration: Its bright colour is highly prized for decorating dishes and buffets.
Storage and preparation tips:
► Storage: Store in the crisper drawer of the refrigerator or in a cool, dry place (ideally between 8°C and 10°C) to prolong their freshness and crunchiness.
► Preparation: Rinse before use. Remove the stalk, seeds and white membranes (which can be bitter). For better digestion, especially if eaten raw, the thin skin of the pepper can be removed after roasting in the oven or under the grill.
