The Extra Aubergine is a premium quality fresh vegetable, characterised by its beautiful smooth, shiny, dark purple skin. Supplied by Le Delas, a wholesaler in Rungis, its flesh is firm, light in colour and becomes very tender when cooked.
Culinary uses:
The aubergine is suitable for a wide range of uses and is a staple of Mediterranean cuisine:
► Stews and gratins: Essential for moussaka, ratatouille, tagine and parmigiana di melanzane.
► Purées and dips: Ideal for making aubergine caviar (baba ghanoush) or mutabal, after being grilled or roasted.
► Fried and grilled dishes: Can be sliced or diced to be fried, grilled or roasted in the oven, often with olive oil and herbs.
► Garnish: Can be stuffed (stuffed aubergines) or used as a side dish.
Storage and preparation tips:
► Storage: Fresh product. Store away from moisture and intense cold (avoid the refrigerator if possible, as this can soften it). Store in a cool, dry place.
► Preparation: Wash before use. Traditionally, it is salted to draw out the bitterness, but modern varieties such as Extra are often less bitter and can be used straight away.
