Packaged in a handy 2-head bag, it is selected by Le Delas for its robustness and its ability to hold its shape perfectly when dressed with thick sauces. Professional uses, preparation and storage: ► Caesar salad: This is the traditional and essential base for an authentic Caesar salad, capable of withstanding rich sauce emulsions without wilting. ► Short cooking times: Its robust texture also allows it to be braised whole or halved, or briefly grilled on a hotplate for warm presentations. ► Preparation: Remove the outer leaves if necessary and cut the hearts into even pieces as required. ► Storage: Store in a cool place between +2°C and +4°C in its original bag to preserve the leaves' natural moisture.
