Red oak leaf lettuce is a leaf lettuce variety selected by Le Delas for the tenderness of its leaves and the elegance of its purple hue. Characterised by lobed leaves reminiscent of an oak tree's, it offers a supple, almost melt-in-the-mouth texture and a delicate flavour with subtle nutty notes. Its voluminous appearance and colour variations ranging from green to reddish-brown make it a major aesthetic asset for refined culinary compositions.
Professional uses, preparation and storage:
► Aesthetics and presentation: Thanks to its jagged, colourful leaves, it is ideal for adding contrast and volume to mixed salads or for serving as a visual base for starters such as terrines or cold fish dishes.
► Fine dining: Its relative fragility compared to Batavia lettuce requires careful handling. It pairs perfectly with light vinaigrettes made with walnut or hazelnut oil, which highlight its natural aromatic profile.
► Preparation: After removing the core, it is advisable to wash the leaves gently in cool water. Gently squeezing out excess water is essential to avoid breaking the tender structure of the leaves and to preserve their airy appearance on the plate.
► Storage: A delicate product that must be stored in a positive-temperature cold room. To maintain the leaves' moisture and prevent wilting, it is best to store them in a humid environment or under a clean, slightly damp cloth.
