Harvested in France, this extra watercress stands out for its slightly peppery taste and intense freshness. Sold in 150g bunches, it adds a refreshing, vegetal note to salads, sandwiches and cold meats. It is also delicious in soups and veloutés, where its intense flavour really comes into its own. This product is available only by order 24 hours in advance, in our Rungis store, Atelier Fruits Légumes, or by delivery.
Sucrine lettuce is a small variety of lettuce recognisable by its elongated shape, crisp heart and small leaves. It is packaged in trays of six heads. Supplied by Le Delas, a wholesaler in Rungis, it is highly prized for its excellent balance between its crisp texture and its mild, slightly sweet taste (from which it gets its name). This makes it an ideal base for many dishes.

Sucrine lettuce is suitable for a variety of uses, providing a fresh and crunchy base:
► Mixed salads: The perfect base for high-end salads, especially Caesar salads, thanks to its crunchiness, which holds up well to dressings.
► Side dish: Served alone or simply seasoned to accompany meat, fish or grilled dishes.
► Garnish: Its leaves can be used as boats for starters (prawns, guacamole) or as a garnish in sandwiches and burgers.
► Cooking: Can be braised or cooked very quickly on a griddle, retaining some of its crunchiness.
Storage and preparation tips:
► Storage: Fresh product. Store in the refrigerator, preferably in the crisper drawer, to maintain its crunchiness.
► Preparation: Wash and dry the leaves before use. Remove the base if necessary.

Iceberg lettuce is a variety of head lettuce, recognisable by its round, very compact shape and pale green leaves.
Supplied by Le Delas Rungis, it is highly prized in professional catering for its exceptional crunchiness, good texture and ability to keep longer than other lettuces.

Iceberg lettuce is suitable for a variety of uses, mainly raw:
► Salads: As a base for mixed salads or mixed greens, its crisp texture holds up well to dressings.
► Garnish: Essential in burgers, sandwiches and tacos, where it adds freshness and crunch without releasing water.
► Wraps: Its large leaves can be used as a substitute for bread or tortillas to wrap fillings (light wraps).
► Decoration: Used to garnish cold dishes and buffets.

► Storage: Fresh product. Store in the refrigerator, preferably in a perforated bag to maintain moisture and crispness.
► Preparation: Remove the outer leaves. Cut or chop the crisp inner leaves. Wash and dry before use.
