Packaged in a handy 2-head bag (approx. 600 g), it is selected by Le Delas for its robustness and its ability to hold its shape perfectly when dressed with thick sauces. Professional uses, preparation and storage: ► Caesar salad: This is the traditional and essential base for an authentic Caesar salad, capable of withstanding rich sauce emulsions without wilting. ► Short cooking times: Its robust texture also allows it to be braised whole or halved, or briefly grilled on a hotplate for warm presentations. ► Preparation: Remove the outer leaves if necessary and cut the hearts into even pieces as required. ► Storage: Store in a cool place between +2°C and +4°C in its original bag to preserve the leaves' natural moisture.
