Purple carrots are distinguished by their deep colour and sweet, slightly spicy flavour. They can be prepared in many ways: roasted in the oven with a drizzle of olive oil, sautéed in a pan with fresh herbs, added to purées or soups to add colour and flavour, or served raw in sticks for colourful salads and dips.
