Professional uses, preparation and storage: ► Culinary applications: The strawberry offers absolute versatility in sweet creations. In fine patisserie, they are the undisputed queen of great classics such as fraisier, thin tarts, pavlovas and charlottes. They lend themselves beautifully to contemporary plated desserts, used raw in verbena-infused carpaccio, finely brunoised, or transformed into intense coulis, full-fruit sorbet and light mousses. In bistronomic cuisine, it dares to create bold sweet-and-savoury combinations, pairing subtly with aged Modena balsamic vinegar or Madagascar pepper, or incorporated into a rocket salad with fresh goat's cheese. In mixology and catering, it is used to make fruit soups with mint, vitamin-packed smoothies or premium summer cocktails. ► Preparation: Strawberries require delicate handling. To preserve their full flavour and prevent them from absorbing water, it is advisable to wash them quickly under a gentle stream of cool water whilst still on the stem, then remove the stem just before cutting with a paring knife. ► Storage: A fresh and delicate product by definition. Store immediately upon receipt in a positive-temperature cold room within the Fruit and Vegetable Workshop, ideally laid flat to prevent bruising and preserve the brightness of their colour.
