These whole scallops with coral (Patinopecten yessoensis) are dredged in FAO zone 61 (North-West Pacific, Japan). Raw, frozen IQF product, size 10/20, with MSC certification guaranteeing sustainable fishing. Culinary uses: These scallops with coral are particularly prized in gourmet restaurants for their tender texture and delicate flavour. Ready to use after thawing, their generous size lends itself equally well to quick pan-frying and more elaborate preparations: carpaccio, ceviche, low-temperature cooking or au gratin in the shell. The coral, which is melt-in-the-mouth and slightly salty, enriches homemade sauces and bisques. Storage: Frozen product to be stored at -18°C. Never refreeze a thawed product.
