This minced beef with 20% beef fat is flavoured with fleur de sel and protected from oxidation by just the right amount of ascorbic acid (Vitamin C).

Maison Polmard combines the unique know-how of 6 generations of butcher breeders from Lorraine, committed to raising and processing meat that people love to eat! In terms of genetics, Maison Polmard only works with exceptional Blonde d'Aquitaine heifers from Lorraine, with the finest grain from the French gene pool, chosen according to strict criteria. Their feed is carefully selected and the welfare of the animals is a key concern on the farms. Finally, a very special maturing process, known as "nacrée" (with crystallised fatty salt), gives the meat a real identity, with flavours that are both intense and delicate. The result is "Haute Couture" products that give pleasure and meaning to tasting. To lock in quality, a unique Hibernation process maintains the meat's cellular structure during cold fixation.
