The beef marrow bone, selected by Le Delas's Butchery Workshop, is cut into a ‘cannon' shape – a straight, even cut that allows for an elegant vertical presentation and easy extraction of the marrow after cooking. This frozen product guarantees consistent availability and optimal food safety for professionals. Beef marrow is highly prized for its creamy, almost melt-in-the-mouth texture and its rich, deep flavour, which instantly enhances many dishes.
Professional uses, preparation and storage:
► Gastronomic applications: The ‘canon' marrow bone is a classic feature of brasserie menus, served roasted in the oven with a pinch of fleur de sel and a slice of toasted country bread. In professional kitchens, it is essential for adding body and creaminess to Bordelaise-style sauces or for enriching pot-au-feu broths. The extracted marrow can also be incorporated into delicate stuffings, crusts for red meats, or used to make a marrow butter for glazing a tournedos.
► Preparation: For a flawless presentation, it is advisable to soak the bones in salted ice water before cooking to remove impurities and blood residues, which helps the marrow retain its pale colour. Oven cooking must be carefully controlled so that the marrow is hot through without completely escaping from the bone.
► Storage: Frozen product; must be stored at a temperature of -18°C. Never refreeze a thawed product. The 20 kg cardboard box is perfectly suited to the needs of high-volume kitchens or for preparing large quantities of sauce stocks.
