This John Dory, selected by Atelier Marée de Le Delas, is one of the most prized fish in French gastronomy for its exceptionally delicate flesh and subtly briny flavour. Caught in French waters, this fish is recognisable by its distinctive silhouette and the dark ‘spot' on its flank. The 300-500g size is particularly sought after by restaurateurs: it is the ideal size for serving the fish ‘whole' on the plate, offering a premium visual and taste experience to every guest.
Professional uses, preparation and storage:
► Culinary applications: Its white, firm and very lean flesh requires delicate cooking to prevent it from drying out. This small size lends itself admirably to cooking whole in the oven, meunière-style or steamed, which preserves all the tenderness of the fillets. For a gourmet presentation, it can be filleted into small, precise fillets, perfect for poaching or searing on one side only. Its delicate flavour pairs well with light emulsions, citrus fruits or spring vegetables.
► Preparation: The John Dory has a large head and pronounced dorsal spines. Although the fillet yield appears lower than that of other species, the exceptional quality of its flesh justifies its place on prestigious menus. The bones and head are exceptionally rich for making clear stocks and seafood jus of great aromatic purity.
► Storage: An ultra-fresh seafood product that must be kept on ice in a refrigerated environment at between 0°C and +2°C.
