Caught in French waters, this fish is recognisable by its distinctive silhouette and the dark ‘spot' on its flank. The 300-500g size is particularly sought after by restaurateurs: it is the ideal size for serving the fish ‘whole' on the plate, offering a premium visual and taste experience to every guest. Professional uses, preparation and storage: ► Culinary applications: Its white, firm and very lean flesh requires delicate cooking to prevent it from drying out.
