These exceptional smoked anchovies, prepared by Rosalita, showcase the finest anchovies in the world, sourced from the cold, clean waters of the Cantabrian Sea. Caught in spring in the Bay of Biscay using traditional and sustainable fishing methods, the fish are selected at auction and processed the very same day in Getaria to guarantee absolute freshness. Heirs to a unique matriarchal tradition dating back to the 16th century, the women of the sea carry out every stage entirely by hand: heading, gutting, brining, then meticulous filleting. The smoking is carried out in the traditional manner using natural beech wood, without any additives or preservatives, giving the fillets their characteristic colour and delicate smoky notes. This is a prestigious artisanal preserve that combines centuries-old tradition with a remarkable nutritional profile, naturally rich in omega-3, vitamins (A, B, D) and minerals (iron, iodine, potassium).
Professional uses, preparation and storage:
► Culinary applications: A true Proustian madeleine for lovers of smoked foods, these meaty, melt-in-the-mouth fillets add an instant touch of luxury. They are perfect served raw on premium pintxos and tapas, paired with crystal bread rubbed with tomato, or to top off canapés at receptions and cocktail parties. In restaurants, they subtly enhance a beef carpaccio, a seasonal salad, or a gourmet pizza just before serving, or can be incorporated into a compound butter to accompany grilled line-caught white fish.
► Preparation: Ready to use, the fillets are individually arranged in the covering olive oil and are easy to handle with serving tongs thanks to their excellent texture. The covering oil, scented with natural notes of beech, can be used to create emulsions or season a seafood tartare.
► Storage: A fresh semi-preserved product that must be kept at a temperature between 0°C and +4°C. Packaged in an RR90 box, this product ensures precise portion control. Available in bulk to optimise stock rotation at the Atelier Marée at Le Delas in the Rungis International Market.
