Retortillat is the truffade of Aubrac: the delicious combination of hash browns, fresh tome made from raw Aubrac milk and matured Laguiole AOP. The fresh tome brings string and cheese flavor; the refined Laguiole comes to forge the character of this traditional dish.

The Jeune Montagne cooperative was founded by a group of young farmers, each having a mountain on the Aubrac, in the Protected Designation of Origin zone defined by the Laguiole cheese specifications. The profusion of plant species at the origin of the quality of pastures and fodder brings an exceptional aromatic richness. It gives milk and cheese a distinctive and specific character that is fully expressed through the Aubrac raw milk recipes. Collected daily from the sixty or so communes of Aubrac, the milk comes exclusively from Simmental and Aubrac cows. These two rustic and mountainous breeds, particularly well adapted to the harsh climate of the Aubrac plateau, are recognized for the quality of their milk. Their diet consists mainly of hay in winter and grazing in summer (120 days minimum per year). Silage, wrapping and corn are excluded.
