Designed to meet the expectations of chefs, caterers and catering professionals for efficiency and consistency, this recipe showcases genuine Greek olives of the Kalamata variety – considered ‘the queen of olives' – which make up a generous 86 per cent of the mixture. The olives are finely ground with a selection of aromatic herbs (parsley, oregano), a touch of chickpeas to bind the mixture, tomato purée, concentrated lemon juice and garlic. The result is a brown, smooth and uniform spread with a typically Mediterranean flavour profile that is aromatic, fresh and natural. Preservative-free and naturally gluten-free, this premium condiment adds an instant touch of sunshine to your menus.
