Artisanal Coppa | Whole French farm-raised pork loin vacuum-packed ±1.5kg LA FERME DU HAUT-MONT
008486
A rustic, buttery cured meat crafted with Cantalian expertise.
This artisanal Haut-Mont coppa embodies the centuries-old tradition of cured meats from the Massif Central. Made from a whole French pork loin, it is cured with fine salt, delicately sweetened, peppered, and coated with herbes de Provence. Thanks to carefully controlled drying and slow aging at high altitude, it develops rustic aromas and a melt-in-your-mouth texture with subtle buttery notes. Its natural intramuscular marbling ensures an incomparable tenderness in every slice, revealing dark red meat marbled with rich, flavorful fat.
Professional uses, preparation, and storage:
► Gastronomic applications: An essential staple for butchers, caterers, restaurateurs, and gourmet food shops. Vacuum-sealed as a whole piece to preserve its freshness, it is ideal for slicing thinly onto charcuterie boards, appetizer platters, and antipasti, or for topping gourmet sandwiches, high-end pizzas, and focaccias.
► Preparation: To fully appreciate the delicacy of its marbling and its melt-in-your-mouth, buttery texture, it is recommended to slice it very thinly using a mechanical slicer. Serve at room temperature, making sure to remove it from the refrigerator or its vacuum-sealed packaging 20 to 30 minutes before plating.
► Storage: A dry-cured product. Store at room temperature (between 20°C and 22°C) in a dry, well-ventilated place. After opening the vacuum-sealed package, wrap the opened piece and keep it refrigerated to prevent the slices from drying out.
