Made from milk collected exclusively in the protected designation area, Isigny PDO 40% MF cream has a smooth texture and a characteristically rich flavour. This thick cream is pasteurised, then slowly matured with specific lactic ferments (Lactococcus lactis, Leuconostoc), giving it its melting texture, ivory colour and delicate flavour. Produced in Isigny-sur-Mer and packaged on the same site, it meets the strict requirements of the PDO. Carefully selected by Le Delas, your wholesaler at Rungis, this cream guarantees consistency, quality and traceability for all food professionals.
Culinary uses: Isigny PDO 40% cream is an essential ingredient in cooking and pastry-making. It is perfect for sauces (beurre blanc, Normande, etc.), quiches, gratins and purées. In patisserie, it is ideal for enriching ganaches, whipped creams, homemade ice creams or cream caramels. It can also be used as a savoury whipped cream to accompany seafood, or incorporated into delicatessen preparations to add roundness and texture.
On an oceanic land of 35 km² that one would think made for dairy production, a traditional cooperative which belongs to the producers and works their fresh milk according to the rules of the art.
The Isigny-Sainte-Mère Cooperative works only over a geographical collection area of 35 km² in the Cotentin and the Basin around Isigny-sur-Mer. From an opulent herbage vintage, a veritable “butter and cream fountain” linked to rich and fertile soils (alluvium, 170 days of rain per year ideally distributed, mild temperatures in summer and mild winters). The result is a milk rich in mineral salts, trace elements and oleic fatty acids. The dairy belongs to the producers and processes the milk collected within 48 hours in a traditional way.
