Le Delas has selected these Pimientos de Piquillos, red peppers cut into triangles about 7 cm long, with a firm skin and flesh that's not too fleshy. The production process consists of roasting them or cooking them over charcoal or gas in a cylinder, without letting them come into contact with water to preserve all their aromas and flavours. Pimientos de Piquillos are ideal for a variety of gastronomic uses. They are most often eaten stuffed with fish or fresh cheese, but can also be eaten cold, cut into strips, in a salad of rocket, cherry tomatoes and cured ham, or hot, whole and pan-fried as an accompaniment to fillet of beef or poultry, or as a starter stuffed with cod brandade, etc. Location in store: Epicerie fine
