Among the many spice blends—some of them secret—collectively known as ‘curry', Madras curry is renowned for its warm and pungent flavours. Particularly recommended for fish and seafood dishes, or to add a kick to vegetarian meals, Madras curry consists of turmeric, cinnamon, cardamom, ginger, pepper, cumin, coriander and chilli. Its attractive yellow colour brightens up pale or somewhat dull dishes. Madras curry powder is also used in the making of breads, breadsticks and puff pastries; it is widely used by caterers to create cocktail bites that are both visually appealing and full of flavour.
