The production principles of De Cecco pasta have been the same for 120 years. The wheats are selected for their pale yellow color and only the heart of durum wheat, ie the noble part of the grain, is used to obtain the semolina. Kneading with mountain water at a temperature of 10 ° C results in dough with perfect cooking capacity. The pastes are then drawn through bronze dies which gives them their unique porosity.
