Culinary uses, preparation and storage: Its generous size makes it the perfect choice for many cooking techniques: ► Stuffed Mushrooms: Their large cavity, once the stem has been removed, can accommodate a variety of fillings (sausage meat, herb duxelles, fresh cheese or snails) for starters or gourmet garnishes. ► Precision Cutting: Ideal for cutting into even quarters, thick slices for quick stir-fries, or brunoise for flavourful duxelles. ► Slow Cooking: Its firm texture allows it to withstand simmering in sauces (blanquettes, bourguignons) without falling apart, whilst retaining a satisfying bite. ► Preparation: To preserve its whiteness, avoid soaking it in water for too long.
