This blend of red and green peppers, selected by Le Delas, is a premium solution for catering professionals seeking consistency and time-saving convenience. Already trimmed, cut into strips, sized and blanched, these frozen vegetables are truly ready-to-use ingredients that retain their crunch and vibrant colour after cooking. This duo, composed in varying proportions, offers a mild and balanced flavour, ideal for adding structure to your hot dishes whilst ensuring a healthy nutritional intake (only 26 kcal/100g). Suitable for vegetarian and vegan diets, this Bonduelle Food Service product meets the requirements of both catering and traditional cooking.
Professional uses, preparation and storage:
► Culinary applications: This duo is a perfect base for making ratatouille, piperade, country-style stir-fries or fajita fillings. It also works well in your tomato sauces, quiches or as a colourful accompaniment to meats and fish selected by Le Delas.
► Catering: In line with GEMRCN recommendations (150g portion for adults), this product simplifies portion control and ingredient cost management thanks to its 2.5kg sachet format.
► Preparation: To ensure optimal quality, follow the cooking instructions:
Combi oven: Minimum 10 minutes at 160°C with 60% steam (uncovered GN tray).
Steam oven: Minimum 14 minutes at 100°C (perforated GN tray).
Fry pan: Minimum 12 minutes for 500g of product.
► Storage: Must be stored in a deep-freeze at -18°C. The Best Before date is 24 months. Once opened, the product can be kept for 24 hours at between 0°C and +4°C. As with all Le Delas products, never refreeze a product once it has been defrosted.
