Le Delas has carefully selected these Argentine red shrimps (Pleoticus muelleri), caught wild in the South West Atlantic (FAO 41) using trawls and frozen on board in Argentina. They are offered whole raw, head and shell intact, quick-frozen by IQF technology, without glazing, with a firm texture and a characteristic red/orange colour. Sizes range from 10 to 20 pieces per kilo. The key to successful langoustines on the barbecue, a la plancha or in a pan is perfect cooking. A good marinade of olive oil, lemon and dill on your halved langoustines, or after having flambéed them with a little pastis, a short trip to the barbecue or plancha will be enough for successful cooking.
