This process maintains the flesh's perfect moisture content and ensures optimal protection against external factors, whilst facilitating storage. Weighing between 400g and 600g, it is the ideal portion for a gourmet starter or a centrepiece on a seafood platter. Professional uses, preparation and storage: ► Gastronomic applications: This crab is ready to serve for your cold buffets, seafood platters or shellfish salads. Its delicate, briny flesh can be extracted to create more complex dishes: shredded crab with dill, light mousses, or even a filling for ravioli. Vacuum-sealed packaging ensures that the flavours of the sea remain intact, allowing you to enjoy it just as if it had just come out of the court-bouillon. ► Preparation: As the product is already cooked and trimmed, simply remove it from its vacuum-sealed packaging. For plating, it is recommended to pre-split the claws to ensure maximum ease of eating for your customers.
