Matured for 6 to 8 months in a cold room until its optimum stage, Ébène expresses an intense taste power and exceptional persistence. Iodized but not very salty, it brings notes of oyster, sea urchin and green hazelnut.
Enjoy it ideally in the simplest form (in the original box on a bed of ice), with a spoon (horn, porcelain, or mother-of-pearl), on a bed of crushed ice. It is at the second spoonful that the taste buds will be opened and you will fully appreciate the flavors of butter, hazelnut or oyster... If you want to accompany it, serve it with a warm ratte, mashed potatoes, a cream of cauliflower or a soft-boiled egg.

The first company to ever attempt caviar production in France, today Caviar de France oversees every step of the production process, from the hatching of fish larva through their growth in specially-selected waters, using natural food sources and without exposure to antibiotics, to the extraction of the precious caviar. At the heart of the Arcachon basin, these Acipenser Baeri sturgeon are raised in an environmentally-responsible and sustainable fashion, in freshwater basins fed by a natural open-cycle river. These conditions produce a caviar not unlike that of Sevruga, with a slight hint of Ossetra. Once they are ten years old, females are refined for 6 weeks in sandy shallows, surrounded by fresh water drawn from a depth of 230m in order to purify the fish and remove any trace of earthiness from the finished product.
