A great classic of French cuisine, the name of the quiche comes from the German Kuchen which means cake. It dates back to the 16th century in Nancy, where it is a specialty bearing the local name of "feouse". Formerly made of bread dough, it is made today with a broken crust. The dough (pure butter) of this Lorraine quiche is crispy and tasty. Slice the quiche into portions, then reheat for about 20 minutes in a preheated oven at 160°C.
