The secret of the fine and delicate taste of this whole duck foie gras is the quality of the duck from which the liver is taken and the broth (whose recipe is not revealed) in which it is cooked which enhances its flavor and its color. This cooking mode also guarantees a near absence of fat. To serve sliced after being taken out of the refrigerator twenty minutes, with just a few toasts, salad leaves and why not a chutney, black cherry or pear-gooseberry for example.

A family business based in Montaut, in Southwest France, since 1920, the Lafitte company has been working on traditional duck foie gras from the Landes for three generations. All ducks are Mulard, an old and slow-growing breed, Southwest France PGI certified. Continuing an old-fashioned farming tradition, they are raised for a minimum of 102 days, in small farms located within 40 km from the production unit, outdoors in a natural environment. Fed with wheat, oats and herbs, they are fattened with whole grain corn from the Southwest guaranteed non-GMO and not pushed in their stomachs. This method of rearing, feeding and slaughtering guarantees tasty foie gras with a texture that is both firm and melting, regularly awarded at the Concours Général Agricole (2016 Gold Medal for Duck Foie Gras).
