Made from male Mulard duck livers, raised for 12 weeks in the Vendée region and fed a 100% plant-based diet, this whole duck foie gras is lightly flavored with Sauternes wine. Cooked at 57 °C to preserve its smooth, melt-in-the-mouth texture. Conveniently packaged in a plastic terrine, it's easy to unmold and slice. Selected by Ledelas.
Culinary uses:
Serve in slices on country bread, brioche, or toast, enhanced with a sprinkle of fleur de sel and ground pepper. Ideal for festive starters, buffets, or gourmet platters.

Specialist of semi-cooked foie gras for 30 years, Tradition & Gourmandises is a subsidiary of Soulard, duck farmer in the Vendée region since 1936. It produces liver of male mule type ducks raised in the open air in the Herbiers de Vendée region, with a 100% french vegetable diet. The temperate climate all year round of the Vendée terroir offers a stress-free natural breeding environment in large meadows without heat spikes. This integrated activities also allows indisputable traceability. After 12 weeks, the corn feeding period takes place with two meals a day in air-conditioned rooms with soft light. Extracted hot and cooled quickly, the most beautiful livers are then sorted and shipped overnight at Tradition & Gourmandises to be processed "by hand" following exclusive traditional recipes in high precision equipment ensuring exemplary regularity.
