This cooked superior half-blade is prepared from degreased, denervated butchered animal cutting pieces (blade). It is cured and cooked. The product comes in the form of a cut piece. The texture is soft but the meat fiber must be well perceived. Already cooked, this palette can simply be reheated. It is traditionally cooked with lentils or sauerkraut.

Brocéliande is a cooperative of more than 300 breeders located in the west of France, engaged in a breeding process respectful of animals and products of better quality. Their pigs are fed with whole grain cereals, without antibiotic treatment, replaced by probiotics and vitamins to prevent diseases. To avoid stress, they live in temperate ventilated, daily cleaned facilities, with twice biger than average troughs and are not castrated.
