Domaine Valentin-Rossignol's 2019 Volnay Vieilles Vignes is an exceptional red wine made from vines at least 45 years old, grown biodynamically in the prestigious Côte de Beaune. This wine reveals a perfect balance of bright fruit, fine acidity and silky tannins, fully embodying the pure expression of the terroir. The nose combines intense aromas of strawberry and cherry with mineral notes and a subtle hint of earth and smoke. Domaine Rossignol-Fevrier has been carrying on the family tradition since 1920, cultivating 18 hectares of biodynamic vines that have been Demeter-certified since 2009. The high vine density (10,000 vines/ha) and the attention paid to the vines ensure optimum ripening and remarkable quality. Vinification & ageing: The grapes, mostly destemmed, ferment slowly in temperature-controlled stainless steel vats, with controlled punching down to extract an elegant tannic structure. The wine is aged in oak barrels (20% new) for 10 to 15 months, without filtration, to preserve its liveliness and complexity.
