► Sensory experience: This wine has an intense ruby colour. On the nose, it reveals aromas of fleshy red fruits (cherry, raspberry) complemented by delicately spicy and earthy notes. On the palate, the tannins are silky and the concentration from the old vines provides a lovely lingering finish.
► Food and wine pairings: Its elegant structure makes it a perfect partner for refined regional cuisine. It pairs wonderfully with confit lamb shoulder, salted pork with lentils, or grilled red meats. It also pairs very well with mature hard cheeses such as Saint-Nectaire or Morbier.
► Serving: For optimal enjoyment, this Mercurey is best served between 14°C and 16°C. Decanting for 30 minutes before serving will allow the complex aromas of the 2017 vintage to fully unfold.
► Storage: This wine is currently at its peak drinking stage. For establishments wishing to store it in a wine cellar, keep the bottles lying down at a constant temperature and away from light to preserve the finesse of its bouquet.
Domaine Valentin-Rossignol's 2019 Volnay Vieilles Vignes is an exceptional red wine made from vines at least 45 years old, grown biodynamically in the prestigious Côte de Beaune. This wine reveals a perfect balance of bright fruit, fine acidity and silky tannins, fully embodying the pure expression of the terroir. The nose combines intense aromas of strawberry and cherry with mineral notes and a subtle hint of earth and smoke.
Domaine Rossignol-Fevrier has been carrying on the family tradition since 1920, cultivating 18 hectares of biodynamic vines that have been Demeter-certified since 2009. The high vine density (10,000 vines/ha) and the attention paid to the vines ensure optimum ripening and remarkable quality.
Vinification & ageing: The grapes, mostly destemmed, ferment slowly in temperature-controlled stainless steel vats, with controlled punching down to extract an elegant tannic structure. The wine is aged in oak barrels (20% new) for 10 to 15 months, without filtration, to preserve its liveliness and complexity.

► Sensory experience: The 2009 vintage boasts a deep ruby colour with slightly evolved highlights. The nose offers an intense bouquet of ripe red fruits (raspberry, redcurrant) evolving into notes of violet, undergrowth and sweet spices. On the palate, there is a perfect balance between the vintage's fleshy roundness and the elegant structure characteristic of a Premier Cru.
► Food and wine pairings: Its delicate structure makes it the ideal companion for tender, flavourful meats. It pairs brilliantly with duck fillet with cherries, veal loin with morels or roast partridge. It also pairs beautifully with creamy cheeses such as Brillat-Savarin or Cîteaux.
► Serving: For optimal enjoyment, serve this wine between 15°C and 16°C. As it is at an advanced stage of maturity, gentle aeration in the glass is sufficient to release its tertiary aromas; decanting is not necessary so as not to overwhelm the finesse of the Pinot Noir.
► Storage: This 2002 vintage is currently at its peak. To preserve its qualities until serving, store the bottles horizontally in a cool, well-ventilated cellar, away from light and vibrations.
