The 2002 vintage of Bollinger's R.D. (Récemment Dégorgé) cuvée is an oenological masterpiece, representing the ultimate expression of the house's expertise. Selected by Le Delas for its legendary character, this cuvée has benefited from extended ageing on lees (more than three times the appellation's requirements) before being disgorged very shortly before release. This contrast between an older vintage and a recent disgorgement offers exceptional aromatic complexity combined with striking vitality.
Food pairings, serving and storage:
► Sensory experience: This Grand Cru is distinguished by a golden colour with amber highlights. The nose reveals developed aromas of quince, honey and toasted hazelnuts, whilst the palate impresses with its tension, minerality and a finish of infinite persistence.
► Prestigious pairings: Its vinous structure and aromatic power make it an ideal companion for haute cuisine. It enhances exceptional dishes such as blue lobster roasted in semi-salted butter, braised sweetbreads or 36-month-old Comté cheese.
► Serving: To appreciate the complexity of the R.D. 2002, it should be served at a slightly higher temperature than a classic champagne, between 10°C and 12°C. Using a tulip-shaped glass rather than a narrow flute will allow its full bouquet to unfold.
► Storage: Although its recent disgorgement gives it incredible freshness, this exceptional wine for laying down should be stored in a dark cellar at a constant temperature, lying down, to preserve the finesse of its effervescence and the balance of its Extra Brut dosage.
