This Canigou fir syrup is made by macerating fir cones (Abies Alba) in sugar over a long period of time. It is harvested by hand in summer, when the ripe cones are full of sap and resin. They are macerated the same day. After several weeks, the nectar obtained is filtered and then packaged. Many chefs use it in their culinary preparations, particularly desserts and macaroons. Its flavour goes perfectly with red and black fruits, such as strawberry soup.
