A traditional process implemented by a large Spanish group in ultra-modern facilities for constant quality and total traceability.
Since 75 years, the Jorge Group is one of the major players in the Spanish meat market. Near Zaragoza, Campodulce is its specialist in Serrano and Iberian ham, combining state-of-the-art technical facilities with the artisanal process required to make a good ham. Slow and gradual maturation, from 9 to 36 months, as well as low salt levels are guaranteed. Serrano hams are made from Duroc, Landrace, Large White and Pietrain pigs, born, bred and slaughtered in Spain. Mafresa, located in Extremadura, is the first site in Spain to manufacture Iberian products (Ibérico Sierra Azuaga). Black pigs are raised and fed with cereals grown by the group.
