Keeping for 3 weeks, these mini sausages are often used as an aperitif or in cocktails. Served hot, they are reminiscent of Morteau or Montbéliard sausages by their color and slightly smoky taste. These very small pork sausages decorated with Comté are a concentrate of Franche-Comté flavors. To be served cold or hot, these montagottes are already cooked and only have to be reheated if necessary, in water or in a microwave.
The flavor of the Franche-Comté delicatessen, enhanced by the traditional mountain smoking process in "tuyés".

Faithful to the traditional recipes, smoker masters of Amiotte smoke all Morteau sausages with pine wood in "tuyés" (See picture). This method of smoking is typical from altitude regions and takes into account various parameters such as wind, temperature, air pressure and hygrometry. Mastering this delicate knowledge ensures the quality and flavor of the sausage that must smoke without drying out. Amiotte Morteau sausage obtained a Gold Medal at the Concours Général Agricole Paris 2016.
