A far cry from mass-produced meat found in supermarkets, Axuria spring lambs from the Pyrenees produce cuts of exceptional culinary quality which are highly sought-after in the high-end artisanal butchery and restaurant market.
This spring lamb is of a rare and authentic quality, produced in limited quantities in the mountains of the Basque country – the Soule valley, to be precise. Spring lamb is available from November to July.
Their meat is lean, tender and pale in colour; it may be grilled, roasted or braised. The flavour is smooth and extremely delicate, and notably less pronounced than that of meat from older lambs.
