A farm-raised lamb, reared in the Causses du Quercy Natural Park and slaughtered before 150 days of age.
The Causses du Quercy Regional Park is home to the Caussenarde du Lot breed of sheep, which is well suited to the sparse vegetation of these vast limestone expanses. It can be recognised by its circular black patches, which give it a sort of eyeglass appearance. Raised by their mothers for around 70 days, their diet is supplemented with cereals and plant-based foods. Its light-coloured meat is tasty, tender and melt-in-the-mouth, ideal for roasting in the oven or on a spit.
