From a short circuit organized by Le Delas, tender Salers beef meat, uniformly marbled and always very tasty.
The Delas selects for you in short circuit Salers cattle from the best breeders in Cantal and Auvergne, the birthplace of the Salers breed. For unparalleled and constant quality, our animals grow up naturally in extensive breeding. They are grass-fed on pasture during the 6 months of the summer season, then in winter with fodder in buildings in their Massif Central mountains. The animals selected by Le Delas are between 5 and 10 years old with a carcass weight of 370 to 440 kilos. They are fattened for 90 to 120 days (against 60 to 90 days in general), without silage, with a cereal-based ration. They are slaughtered locally at short distance from the farm, then cut up in our butchery workshop in Rungis. The result of this drastic selection and these demanding farming methods is a tender, uniformly marbled and very tasty beef meat.
