Classic Provençal, with pieces of zucchini, carrots, green beans, potatoes, white and red beans and tomato, pistou soup is one of the richest soups in vegetables. It also contains pasta and is enhanced with basil and garlic.
For this pistou soup to have an authentic taste, the vegetables are prepared and cooked fresh, the same day they are received at the cannery. It can be served with parmesan or gruyère.
Le Delas has chosen this locavore soup from Les Sept Collines, made in Paris, Ile-de-France, without additives or preservatives, from vegetables bought directly from farmers. This soup was awarded a prize by the Guilde des Artisans de la Tour Eiffel. Enjoy it au gratin with cheese and croutons or plain. Serves 3/4.
