► Culinary applications: A true benchmark for precision Japanese cuisine, Koshihikari is indispensable for making sushi, sashimi and onigiri thanks to its excellent hold and natural stickiness. As a table rice, it elegantly accompanies stews, grilled fish or premium meats (such as Wagyu). Its ability to retain its softness even when cooled also makes it a first-rate choice for bento boxes and high-end catering.
► Preparation: For best results, rinse the rice three times in cold water until the water runs clear. A 30-minute rest period before cooking is essential to allow the grains to rehydrate evenly. When cooking, use a ratio of 1 part rice to 1.1 parts water.
