These yellow split peas, selected by Le Delas in consultation with grain experts, are distinguished by their subtly sweet flavour and creamy texture when cooked. Particularly rich in fibre and protein, they form an essential staple for commercial kitchens and traditional restaurants. Its ability to break down partially during cooking makes it a first-rate natural binding agent for rustic or contemporary recipes.
Professional uses, preparation and storage:
► Culinary applications: Essential for making purées (such as a reimagined Saint-Germain purée), thick soups, legume dahls or rustic vegetable soups. It can also be used, cooked al dente, to add texture to legume salads or to accompany smoked meats and braised pork cuts.
► Preparation: Rinse the peas thoroughly under cold water before use. There is no need to soak them beforehand. Place the peas in a large pan of cold water, bring to the boil and cook for 30 to 40 minutes depending on the desired texture. Only add salt at the end of cooking to prevent the skins from toughening.
► Storage: A dry product to be stored in a cool, dry place away from light to preserve its nutritional qualities. This product has a very long shelf life, allowing for safe storage in the pantry without any loss of flavour or texture.
