The raw beetroot is a hardy root vegetable selected by Le Delas for its dense flesh, characteristic sweet taste and intense purple colour. Unlike the cooked version, raw beetroot retains all its nutritional value, natural crunch and powerful pigments (betalains). Presented in pieces of approximately 400 g, it offers a generous size allowing for precise and varied cutting. Available at the Fruit & Vegetable Workshop, it is the ideal product for chefs wishing to master their cooking techniques or explore innovative raw preparations.
Culinary uses, preparation and storage:
Its versatility allows it to be incorporated into a wide range of dishes, from the most rustic to the most refined:
► Raw preparations: Finely grated for a crunchy salad, or sliced on a mandoline into translucent carpaccio. It pairs divinely with goat's cheese, walnuts or a citrus vinaigrette.
► Controlled Cooking: Roasted whole in the oven on a bed of coarse salt to concentrate its sugars, or seared in a pan with a dash of balsamic vinegar to accompany a robust meat.
► Extractions and Juices: Its high juice content and vibrant colour make it a perfect base for freshly pressed ‘detox' juices, light mousses or cold soups such as borscht.
► Preparation: Brush thoroughly under running water to remove any traces of soil. To preserve its colour during cooking, it is advisable to leave a small section of the stalk and only peel it after cooking.
► Storage: Long-keeping produce. Best stored in a cool, dry place away from light, or in the crisper drawer of the fridge to maintain its firmness.
