Frozen whole, these porcini mushrooms come in different sizes: caps from 2 to 6 cm in diameter. Once rinsed, they can be accommodated like fresh mushrooms. If they must remain whole, they will be thawed in a frying pan without fat first, otherwise they will be sliced before complete thawing.
Very typical, morels are particularly appreciated in omelets, with cream, in sauce or as an accompaniment to poultry. To guarantee them an optimal and constant quality throughout the year, these selected morels are frozen fresh and raw and can be kept for several months in the freezer. Depending on their needs, restaurateurs only need to rinse, mince and fry them, without defrosting them first.
This mixture of 5 varieties of mushrooms combines oyster mushrooms, button mushrooms and shiitake mushrooms. It contains a mix of whole, sliced and broken mushrooms. To preserve all their flavours, these mushrooms are not completely washed before freezing and therefore require rinsing before being cooked. Pan-fried, parsley, stuffing, omelet, velouté, terrine... the uses of this mixture are very numerous.
