This halophilic sea vegetable, often known as sea gherkin or sea bean, is characterised by its fleshy, crunchy stems with a natural briny flavour. Selected by Le Delas for the delicacy of its shoots and its vibrant freshness, this wild coastal plant is a valuable culinary asset, adding natural salinity and a unique texture to ocean-inspired gourmet creations.
Professional uses, preparation and storage:
► Culinary applications: Perfect for accompanying premium fish, crustaceans and shellfish, it can be served as a vegetable in its own right or incorporated into white butters and virgin sauces.
► Textures and contrasts: Its crunchy texture allows for the creation of interesting textural contrasts in seafood salads, sea bass tartares or as a garnish for seafood risottos.
► Preparation: Very little cooking is required; a quick blanch or a brief fry in butter is sufficient to preserve its crunch. It can also be used raw after being thoroughly rinsed for a burst of saltiness on the palate.
► Storage: A delicate product that must be kept in a positive-temperature cold store, ideally in its original packaging or under a damp cloth, to prevent the stems from wilting and losing their natural juices.
