World famous for its sublime silver color, the herring is a noble fish that lives in Europe in the cold waters of the North Seas. Called the "corn of the sea" by the Gauls, it reigned supreme in the Middle Ages during Lent.
In Boulogne-sur-Mer, between November and December, during the traditional "herring season", fishermen go in search of it as it travels along the Opal Coast during its annual migration. In one night, Boulogne fishermen can thus bring up several tons of herring in their nets, within the strict limit of regulatory quotas. A few hours later, the coastal herring is salted and then carefully stored in the J.C. David establishments in order to be carefully prepared.
