Amber agricultural rum, XO, arranged, Black Cane...
Gouverneur 1648 is a rum of the purest tradition of the West Indies, aged in the cellars of Saint-Martin. It was developed by Master Blender Olivier Klienhans from several agricultural rums over 10 years old (out of age) from Marie-Galante, Guadeloupe and the Dominican Republic. This Gouverneur 1648 rum is a tribute to the Treaty of Condorlia which still organizes the sharing of Saint-Martin between France and Holland. It is made from freshly squeezed cane juice and molasses, without adding sugar or coloring, and not cold filtered. Its nose is toasted and woody with notes of candied fruit and caramel, its mouth is on cocoa, liquorice with a hint of beeswax. Its finish reveals a hint of cinnamon and notes of candied fruit.
To be served 5 minutes before tasting in a stemmed glass with a wide base that closes upwards.

Bologne is the only distillery in Guadeloupe that continues to grow black cane and cut it manually. Indeed, its low yield has penalized it, but its aromatic richness, its fruity nose, a lingering finish in the mouth, have made it unavoidable and represents well the typicity of rum. This Black Cane rum has a robe of crystalline clarity, which has kept the very rich flavors of fresh cane, fruity notes of lemon, pear and exotic fruits and a hint of iodine. A harmonious, specific and surprising rum! Ideally suited for tasting: neat, in lemon "ti punch" or homemade fruit punch, with or without ice.
The Old Black Cane cuvée, the first single-variety old rum, was aged for three to six years in ex-cognac French oak barrels. A know-how, which the cellar master was able to decline with elegance and sublimate them in an exceptional cuvée. On the palate, it offers flavors of candied fruit, cinnamon, macadamia and pecan nuts. The sweetness of black cane blends with liquorice and prickly pear. A long, sweet and spicy finish. This rum can be tasted neat with or without ice, and let it rest for a few minutes in the glass before tasting. An essential rum, an ally of tasty cocktails!

Its persistence expresses all the complexity of its blend and its long ageing, giving it all the attributes of a very Grand Rhum Vieux.
