What is parsley ham?

A cooked charcuterie product, parsley ham originates from Burgundy. It is a blend of ham and pieces of pork shoulder brined and cooked in broth and an aromatic sauce with parsley, white Burgundy wine, vinegar... The maintained know-how of the artisans of the Burgundy region on distinguishes cooked hams or head cheese!

How is parsley ham eaten?

There have been a thousand ways to savor one of our good parsley hams, in cubes as an aperitif, in a hodgepodge for a tapas, or simply sliced for a starter. You can also work the parsley ham into a tasty croque monsieur or dress it rolled up in a strip of zucchini like a maki.

Serve it with a dry and rather young red wine, a Chénas, a Beaujolais for example, or Encore a Sancerre.
