Nyons oil comes from the first cold pressing of olives of the Tanche variety. This extra virgin quality oil is characterized by its creaminess, its golden green color and its fine aromas of fruit, hazelnuts and almonds. It owes its character to a late harvest (December/January) and its terroir. Nyons PDO olive oil is multi-purpose. Sweet on the palate, it is perfect with raw vegetables. Withstanding heat, it can be used for finishing hot dishes, for cooking and even frying.
Unique and rare, Nyons Tanche black olive is considered among the tastiest in the world.
Greek colonization more than 25 centuries ago spread the culture of the olive tree around the Mediterranean shores. The terroir of Nyons is the most northern location of the olive tree, protected from the winds by the last foothills of the Alps, with almost constant sunshine and low rainfall. There was adapted a unique variety of olive, "Tanche", which gives "Black Nyons Olive", resulting from a long acclimatization. Outside the micro-climate of Nyonsais and Baronnies, all attempts to implement it have failed! Harvested at maturity, after the first frost which is worth its slightly frippled appearance and stops the ripening of the olive by eliminating its water, the "Tanche" olive is black, fat and fleshy. Preserved in brine (water and 10% salt only), or worked in oil, tapenade and affinade, it offers a round, fruity, buttery and very sweet taste.
