Harvested at full maturity, these artichokes, canned directly to keep their crunch, can be served as is with charcuterie, cheese or salad. They are also tasty when grilled or sautéed in olive oil: simply seasoned or accompanied by some herbs and shavings of Parmesan, topping meat or fish.
